Let me ask you a question. Do you love potato soup? What about bacon cheeseburgers? I mean, who doesn’t love those two things? Around here, both of these meals are something I can get my kids to eat without a fight, which is always a plus in my book. This soup recipe marries the two together to form the ultimate, cool weather comfort food. Perhaps the best thing about this recipe is that cooking it for dinner makes enough for lunch the next day or two as well. It’s always a good thing when I can cut down how many times a day I’m in the kitchen.

This soup is not difficult and really doesn’t take too long. You are going to spend more time chopping the potatoes than any other step. If you can boil water and fry bacon you can totally rock this soup!

Basically, if you like cheese burgers, bacon and potatoes and you don’t mind spending a few minutes in the kitchen then you are going to LOVE this hearty, cheesy potato soup!

Gather your ingredients. I used a full pound of this delicious, thick sliced DaBecca bacon that I buy at Costco.

I prefer to cut up everything I am going to need before I start cooking, it’s just easier since I tend to get distracted by the kids if I try to wait and cut up one thing while something else is cooking. Talk about mom brain overload. For this soup I cut the potatoes in to medium sized chunks and coarsely chopped the onion and bacon.

Put the potatoes in a large pot and cover with water. I also add a heaping tablespoon of beef better than bouillon to the pot to give the soup a beefier flavor. Cook over high heat until boiling then reduce to medium high and cook until potatoes are fork tender.

While the potatoes are cooking, cook bacon until crispy over medium heat in a separate pan. Once done remove from pan and drain on a paper towel covered plate.

Dispose of all but 2-3 tablespoons of bacon grease and add chopped onion to the pan. (Everything tastes better cooked in bacon grease!) Cook the onion until it starts to turn transparent.

Once the onion is cooked add hamburger meat and cook until browned.

Next we need to thicken up the soup. When the potatoes are done cooking mix 3 tbsp of flour with about a cup of the liquid the potatoes were cooked in. Mix well and then pour the mixture into the pot of potatoes. Stir the mixture into the soup well to thicken.

Mash about half of the potatoes. Mix the meat and onion mixture, cooked bacon and 3 cups of shredded cheese into the potato mixture. Make a bowl and enjoy!

Hearty & Cheesy Bacon Burger Potato Soup


  • 1.25 lb Ground Beef
  • 1 lb Thick Sliced Bacon, chopped
  • 1/2 Large Yellow Onion, chopped
  • 4 Baking Potatoes, peeled and cut into chunks
  • 3 Cups Cheddar Jack Cheese, shredded
  • Beef Better Than Bouillon or Beef Broth
  • 3 tbsp Flour
  • Salt & Pepper


  1. Wash and peel potatoes. Cut into approximately 1" chunks.
  2. Add to a large soup pan and just cover with water and heaping spoonful of Beef Better Than Bouillon. (Or use beef broth in place of water & bouillon combo).
  3. Bring to a boil and cook potatoes until they are easily pierced with a fork. Once cooked through reduce heat to medium low.
  4. While potatoes are cooking Chop bacon and onion. Cook bacon over medium heat until crispy. Remove bacon from the pan and drain on a paper towel.
  5. Remove all but 2-3 tablespoons of bacon grease from the pan. Cook onion until translucent."
  6. Add beef to the pan with the onion and cook until browned and cooked through. Remove from heat.
  7. Mix 3 tablespoons of flour with approx. 1 cup of cook liquid and add to pot of potatoes to thicken the soup.
  8. Mash about half of the potatoes. Add beef and onion mixture. Add cheese. Stir until the cheese is melted.
  9. Add bacon to the soup and remove from heat.
  10. Make yourself a big bowl and enjoy.
